This was the other side dish that Michael prepared to pair with the simple fettuccini + kale alfredo and the roasted red beets with white onion and tarragon. These mushrooms were very easy to prepare and super delicious! I’m weird about my mushrooms, but balsamic marinade, or balsamic anything will pretty much get me to eat the fungus.
- 1 package baby bella mushrooms, cleaned/cut into slices
- 5 sprigs fresh tarragon
- 2 tbsp olive oil
- 1/4 cup balsamic vinegar
- salt & pepper to taste
directions: Preheat your oven to 400°F. Add the olive oil to the bottom of a glass baking dish. Add your mushroom slices, balsamic vinegar, salt, pepper, and fresh tarragon. Pop this into the oven for about 20 minutes (or longer if that’s your preference). Remove, and you’re done. A simple side dish with minimal effort and all the wonderful bold flavor. This side dish can be paired with just about anything… pasta, rice, quinoa, beans, other veggies, etc. Enjoy these shrooms!
